This is a blend of selected Syrah, Grenache and Mouvedre grapes. Fermentation with native yeasts is split between concrete tanks and terracotta amphorae for 18 days, after this the wine is racked into barrels for 14 months where malolactic fermentation occurs. These barriques are 20% new french oak. This is a powerful wine with intense blackberry, dark chocolate and tobacco notes. There is a silky mouthfeel and an elegant finish of berries and spice. Excellent with flavourful roasted meats like lamb and game, also with stews and aged cheeses and hearty pasta dishes.
